The festive season at the end of the year is a good excuse for indulging in excess and pleasure. It's always a magical moment to which an excellent cuvée obviously lends the defining touch. To thank ones hosts or to delight ones guests, Anna Caidan suggests some champagnes of distinction, to sparkle all night. So... happy festivities!

RD Récemment Dégorgé 2004

Dazzling, 2004 R.D Bollinger cuvée captivates with a deep gold colour. Refined and complex the nose opens with notes of compote fruit, aromas of dried fruit and sweet spices. The wine deploys gourmet flavours of candied fruit, tart Tatin that fills the palate in perfect harmony. Pair deliciously with scallops and morels, pheasant terrine, daube of goose, dessert (buche de Noël with exotique fruits, fresh fruit salad or raspberry macarons).


Brut Sous Bois

Brut Sous Bois is a champagne made from 3 main grape varieties: Pinot Noir, Pinot Meunier and Chardonnay. It displays great character and expressiveness and a golden colour studded with fine and regular bubbles. On the nose, an intense, concentrated and rich cuvée. It is a champagne that evokes at first, dried citrus and white fruits and then the notes are rounder and more complex, with a light touch of vanilla. On the palate, it offers a very elegant, silky and creamy texture; freshness and power mingle gracefully with lightly toasted notes. Pair beautifully with a langoustine tartar with oysters, turkey with morels, or Comté cheese.


Avize Champ Caïn 2005

Discreet and complex nose that exudes mineral and chalky fragrances. In the mouth, Avize Champ Caïn 2005 shows great complexity and freshness, with a solid structure, good tension, finesse and elegance. Delicious with lightly cured meat, veal and poultry as well as fruit salad and berry desserts.


Vieille Vigne du Levant Grand Cru Extra Brut Blanc de Blancs 2009

A sumptuous and richly colourful Chardonnay. Subtle elevage for eleven months in vat and eight years in bottle. A voluptuous champagne of great refinement, deep and racy. Sublime with lobster, Sushis and Sashimis or red berry pavlova.


Cuvée Sir Winston Churchill 2006

Sir Winston Churchill Cuvée from Maison Pol Roger is a tribute to the famous politician, elaborated in the style of Champagnes that Churchill loved, robust and mature. Composed of grapes from Pinot Noir and Chardonnay Grands Crus, this champagne is only produced during great vintages. Vintage Sir Winston Churchill 2006 is adorned in a golden yellow colour. The bubbles are of infinite finesse. The nose reveals a complex aromatic richness, dominated by scents of dried fruits and honey. On the palate, it is a wine that offers a beautiful freshness, balanced structure and round ripe citrus aromas, all enhanced with a lingering finish. Exquisite with sweetbread and morels, feathered game, aged Parmigiano cheese.
