Wine Review

Crimson Pinot Noir 2016, Martinborough, New Zealand

This wine is named after the Charitable Trust Conservation called Project Crimson. Its goal is to plant and protect a species native to New Zealand, a stunning red flower, known as "Christmas tree", Pohutukawa and Rata. This 100% Pinot Noir exudes aromas of crushed rose petals and cherries, while notes of blackberries and a hint of liquorice help create a delightful and intoxicating bouquet. On the palate, this wine is silky, unctuous and wonderfully well balanced, linear and feminine. Pair it with cod a la Provençale, roast Bresse chicken, grilled quails with foie gras.

2012, Washington State, USA

Col Solare is the association of two influential wine producers recognized as leaders in their respective regions: Marchesi Antinori of Tuscany and Château Sainte Michelle of Washington State. Col Solare, in Italian "Sunny Hills" realizes the mission to unite two unique viticultures to produce an ultra-luxurious Cabernet Sauvignon. This Col Solare (85% Cabernet Sauvignon,7% Cabernet Franc, 4% Merlot, 4% Syrah) exhibits on the nose ripe aromas of black cherries, blackcurrants and blackberries, mixed with subtle hints of vanilla and milk chocolate. The tannins are rich and refined in the finish, with flavours of berries, black fruits and coconut. Enjoy it with chicken on a spit, beef with ceps, matured cheese (Maroilles, Livarot, Tomme).

Malbec Réserve 2015, Mendoza, Argentina

Malbec Réserve 2015 is the emblematic blend of Domaine Bousquet, which consists of 85% Malbec, 5% Syrah, 5% Cabernet Sauvignon and 5% Merlot. This organic wine is of intense violet colour. In the mouth, there are rich aromas of red fruits with notes of chocolate and spices, a nice length, and a very balanced finish. Domaine Bousquet's wines express the power and fruit of the Argentinean terroir combined with French elegance and finesse. Pair it with beef skewers, mature brie, chocolate cake.

Plexus 2015, Barossa Valley, Australia

The purpose of this "Plexus" is to express the wide range of red fruits from Syrah, Grenache and Mourvèdre but also to provide structure with a continuous balance and a long finish. A small percentage in new barrels add complexity without dominating the red berries. Minimal intervention and viticulture techniques are used in this wine, allowing an approach in its youth but with a large structure and an intense fruitiness. This will give it a great aging potential and an opportunity to improve for at least 8 to 10 years. A deep and vibrant purple colour, on the nose, an association of red fruit aromas supported with a touch of savoury spices and a subtle complexity of oak barrels. On the palate, it reveals young aromas of black fruits and red fruits mixed with a display of spices. A sublime depth of flavours, a melting mouth, without heaviness or too much fruit. Delicious with chicken Tandoori, marinated tuna, cheese (Manchego, Munster, cheddar).

Casa Real Cabernet Sauvignon, 2013, Maipo Valley, Chile

Santa Rita is widely recognised as the ambassador of world-class Chilean wines. This 100% Cabernet Sauvignon shows tremendous potential and incredible typicity. The fully ripe grape gives this wine an increased freshness with an extraordinary structure. A deep and intense red-ruby colour and a complex nose with aromas of red fruits, plums and cherries already charm. Added to this are notes of black fruits, such as blackberry and blueberry combined with a delicious hint of vanilla and coffee. The balance of fruit and acidity, complemented by soft, silky tannins promise a long aging potential. Delightful with roast beef, duck fillet, cheese (Chaource, goat cheese, Brillat-savarin).
