Dorset-based Percy’s Bakery has long been known in industry circles as the supplier of heavenly biscuits to some of the UK’S most prestigious hotels and private addresses. Less well known, however, is its range of chandelier creams and fanciful thins. Among the bold flavours are Rhubard & Custard; Strawberry & Almond Tart; and Salted Caramel, Honey and Bee Pollen, which is hand-garnished with honeycomb and a dusting of golden bee pollen.
For something with red fruit flavours, savoury twist, full body and firm grip, look to Piedmont in Italy. Here, the Nebbiolo variety makes wines of great perfumes and heft. Giuseppe Cortese, Barbaresco Rabajà 2003 is a case in point, benefiting from nearly 15 years of bottle age, which gives it a mellow, persistent palate and wonderful flavours of truffle, earth and cocoa.
